Abstract

In Law No. 18 of 2012 Article 67 paragraph 2 "Food safety is intended to prevent the possibility of biological, chemical, and other objects that can interfere, harm, and endanger human health.". Therefore, the purpose of this study was to determine whether the machete made of Bohler K340 steel was resistant to brittleness (physical contamination) when cutting bone, and to determine whether the mechanical properties of the machete made of Bohler K340 steel were suitable as a machete material. As for the value of the mechanical properties of the raw material with a tensile strength of 542.5 MPa, an impact value of 0.085 J/mm2 and a hardness value of 309.37 HV, the formation of a machete with the forging process experienced a thickness reduction where the initial raw material object has a thickness of 7 mm is reduced because the forging process becomes an average of 4.3 mm, meaning that it has a thickness reduction value of 38.5% and quenching is carried out. Then the change in the value of the mechanical properties of the machete with the results of a tensile strength of 823.25 Mpa, an impact value of 0.053 J/mm2 and a hardness value of 512 HV. With the results of the mechanical properties obtained, an application test was carried out on a machete to cut beef bones and the result was that the machete made of Bohler K340 steel did not experience lumps when slashing bone. Additional Information: Dalam Undang-Undang Nomor 18 Tahun 2012 Pasal 67 ayat 2 “Keamanan pangan dimaksudkan untuk mencegah kemungkinan adanya bahan biologis, kimia, dan benda lain yang dapat mengganggu, merugikan, dan membahayakan kesehatan manusia”. Maka dari itu tujuan penelitian ini adalah untuk mengetahui apakah golok bermaterial baja Bohler K340 tahan terhadap getas (cemaran fisik) saat menebas tulang, mengetahui, apakah golok bermaterial baja Bohler K340 mampu tempa dan mesin, serta untuk mengetahui sifat mekanik golok bermaterial baja Bohler K340 apakah layak menjadi material golok. adapun besar nilai sifat mekanik raw material dengan hasil kuat tarik 542,5 Mpa, nilai impak 0,085 J/mm2 dan nilai kekerasan sebesar 309,37 HV dilakukan pembentukan golok dengan proses tempa mengalami reduksi ketebalan dimana benda raw material awal memiliki tebal 7 mm tereduksi karena proses tempa menjadi rata-rata 4,3 mm artinya memiliki nilai reduksi ketebalan sebesar 38,5 % dan dilakukan quenching. Maka didapatkan perubahan nilai sifat mekanik golok dengan hasil kuat tarik 823,25 Mpa, nilai impak 0,053 J/mm2 dan nilai kekerasan sebesar 512 HV. Dengan hasil sifat mekanik yang didapatkan dilakukan uji aplikasi pada golok untuk menebas tulang sapi dan hasilnya golok bermaterial baja bohler K340 tidak mengalami gompal pada saat menebas tulang.
