Abstract

Penelitian ini dilaksanakan pada bulan Maret-November 2014 di kampus UNTIRTA Serang, Pasar Rau Serang dan Laboratorium Teknologi Pengolahan Hasil Perikanan, Jurusan Perikanan UNTIRTA. Penelitian ini dilakukan dalam dua tahap. Penelitian pendahuluan dilakukan dengan menggunakan metode survei yang dilakukan untuk menentukan pengambilan sampel menggunakan kuisioner. Penelitian utama terdiri dari uji kandungan formalin secara kualitatif menggunakan test kit formalin (antilin) dan kuantitatif menggunakan spektrofotometri UV-Vis, serta uji kandungan boraks secara kualitatif menggunakan test kit boraks (antirax). Sampel yang digunakan yaitu bakso ikan, pempek, siomay, otak-otak goreng dan bontot ikan. Pengambilan sampel dilakukan setiap minggu selama satu bulan. Pengambilan sampel dilakukan dengan teknik purposive sampling. Data hasil penelitian dianalisis secara deskripitif. Hasil observasi makanan jajanan di sekitar kampus UNTIRTA dikelompokan menjadi dua yaitu, makanan jajanan berbahan baku ikan dan tidak berbahan baku ikan. Makanan jajanan berbahan baku ikan terdiri dari siomay, pempek, bakso ikan, otak-otak goreng dan bontot ikan. Makanan jajanan tersebut tersebar di sekitar kampus UNTIRTA. Hasil analisis formalin secara kualitatif menunjukkan semua sampel dominan mengandung formalin. Sampel uji yang menunjukkan hasil negatif yaitu siomay ikan (minggu ke-1), pempek dan bakso ikan (minggu ke-4). Hal ini karena kandungan formalin pada sampel kurang dari 1 ppm. Hasil analisis formalin secara kuantitatif didapatkan konsentrasi formalin terbesar ditunjukkan pada sampel pempek (2,02 ppm), siomay (1,99 ppm) dan bakso ikan (1,78 ppm). Konsentrasi formalin terendah ditunjukkan pada sampel pempek di minggu keempat (0,62 ppm). Analisis boraks secara kualitatif pada sampel menunjukkan bahwa semua sampel negatif boraks. Makanan jajanan berbahan baku ikan yang terdapat di sekitar kampus UNTIRTA pada periode Maret-November 2014 tidak aman untuk di konsumsi karena semua sampel makanan jajanan tersebut positif mengandung formalin, meskipun kandungan boraks pada sampel negatif.

Additional Information: One of issues in food safety on fishery products is on the abuse of dangerous food additives. Formalin and borax are examples of dangerous food additives which commonly used by the people, including in the manufacturing of traditional sustenance. The aim of this study was to analyze the formaldehyde and borax content in quality and quantitatively on traditional sustenance from fish which were sold around Sultan Ageng Tirtayasa University Serang. Preliminary study was done by a survey method to determine the sample. While the main study in testing of formalin content qualitatively was done by a test kit called antilin, and quantitatively by using a spectrophotometer UV-Vis. While for borax the test kit (antirax) was used to analize borax content as qualitative method. The result showed that traditional sustenance made of fish sold in around the campus were various namely: siomay, pempek, bakso ikan, otak-otak goreng and bontot ikan. The result of the formaldehyde qualitative analysis showed that all samples were dominantly contained the formaldehyde. The result of the formaldehyde quantitative analysis showed that largest formaldehyde concentration was on pempek (2.02 ppm), then siomay (1.99 ppm) and bakso ikan (1.78 ppm), respectively. While the lowest formaldehyde concentration was found on pempek in fourth week (0.62 ppm). The result of the borax qualitative analysis showed that all samples was not contain borax. It is assumed that traditional sustenance from fish in around Sultan Ageng Tirtayasa University Serang during period March-November 2014 were unsecured to be consumed because all traditional sustenance sample contain formaldehyde, although no borax were contained
