Abstract

Barracuda fish processing as a raw material for making fish otak-otak is one of the innovations. These innovations add value to barracuda fish commodities. In addition, food safety in the fish raw materials also need to be considered, one of which formaldehyde. It was done so that the health of consumers is ensured. The purpose of this study is to determine the freshness of the fish and the formalin content in the barracuda otak-otak in Labuan qualitatively and quantitatively. This study was conducted in May-June 2016. Tests of formaldehyde conducted in Fisheries Technology Laboratory (TPHP) Fisheries Department of the University of Sultan Ageng Tirtayasa. Microbiological analysis and pH do Chemistry Laboratory Testing Center Quality and Processing of Fishery and Marine Jakarta. The test result of barracuda fish as a raw material for making the otak-otak from the testing TPC best raw materials barracuda obtained from the processor 2 with a value of 13x103 CFU / g, testing TVB-N with the best value 13:54 Mg N / 100g obtained from processors, while at pH testing with the best value 7.300 obtained from middlemen. The test results of formaldehyde quantitatively in the otak-otak of barracuda fish has positive for containing formalin with different concentrations. The concentration of formaldehyde highest in the otak-otak for the third week there on a sample of otak-otak A (1,60 ppm), the first week there on a sample of brains A (1,13 ppm), and the third week there on a sample of brains B (1,13 ppm). Lowest formaldehyde concentration in the samples indicated the brains of the first week C (0,23 ppm). Based on these results, of the samples were positive contain formalin although the formalin content is low. Keywords: Barracuda, Formalin and Otak-otak
