Abstract

ISNA MELATI EKA PUTRI. 2016. Quality Changes of Tarpon indo-pasific (Megalops cyprinoides) in Chilling Temperature Storage. Supervised by ARIS MUNANDAR and SAKINAH HARYATI. Tarpon indo-pasificfresh fish a weakness, that is susceptible to damage or deterioration of quality. The processing speed is influenced by many factors, both internal factors that have more to do with the nature of the fish external or relating to the environment. Decreasing the qulity of fish divided into three phases, they are: pre-rigor, rigor mortis, post rigor phase. Data analysis used are yield, chemical ingredient, organoleptic, sensory test, TPC test, TVB analysis and pH. Based on the result of the research, the researching concluded that yield of tarpon indo-pasific consist of head 35,5%, scale 5,6%, skin, fin and bone 33,1%, innards 9,2%, and meat 57,8%. The quality content in tarpon indo-pasific is water degree 75,08 %, grey 4,13%, protein 15,31%, fat 2,23%, and carbohydrate 2,51.
