Abstract

Penggunaan minyak jelantah yang telah digunakan berulang kali akan berakibat fatal bagi kesehatan manusia. Pemanasan minyak goreng pada suhu tinggi akan menyebabkan peningkatan kadar asam lemak bebas dan bilangan peroksida pada minyak, oleh karena itu minyak jelantah perlu diolah terlebih dahulu agar dapat digunakan kembali. Hasil penelitian menunjukkan bahwa metode pemurnian minyak jelantah yang diaplikasikan dalam penelitian ini dapat mendegradasi warna minyak, menurunkan kadar asam lemak bebas dan bilangan peroksida. Hasil optimum dalam penelitian ini yaitu laju alir massa minyak pada proses despicing yaitu 0,139 g/s, temperatur 40°C dengan pengadukan 500 rpm pada proses netralisasi dan zeolit alam bayah pada proses bleaching, dengan kandungan asam lemak bebas (FFA) 2,41 mg NaOH/mg lemak, bilangan peroksida 7,37 mekO2/kg, degradasi warna sebesar 53,93% dan kadar air sebesar 0,32% (w/w).

Additional Information: The cooking oil that has been used repeatedly will have fatal consequences for human health. Heating cooking oil at high temperatures will increase the free fatty acid levels in the oil, therefore used cooking oil needs to be processed first so that it can be reused. The results showed that the used cooking oil purification method applied in this study could degrade the color of the oil in the sample and reduce the free fatty acid content and peroxide number in used cooking oil. The best results in this study were the despicing process with an oil mass flow rate of 0.139 kg / s, the neutralization process at 40°C with 500 rpm stirring and the bleaching process using natural zeolite. Bayah had free fatty acid levels of 2.41 mg NaOH / mg fat, peroxide number of 7.37 mekO2/ kg, color degradation 53,93% and a moisture content of 0.32% (w/w).
